Brown sugar shochu is a unique Japanese distilled spirit made primarily from brown sugar and rice koji, produced only in the Amami Islands.

Unlike rum (which is also made from sugar), brown sugar shochu undergoes a fermentation process using koji mold—typical of Japanese spirits like shochu—giving it a lighter, cleaner, and more refined taste.
