Music-Aged Brown Sugar Shochu ‘Socin Aging’ is a matured spirit exposed to six distinct musical genres

<Rock, Reggae, Hip hop, House, Latin, and Shima-uta (Amami local songs)>.

Since 2023, we have been conducting this experiment to understand how the vibrations of each music genre affect the maturation process within the barrels and what flavour changes occur.

Nishihira Shuzo is a brewery where music converges – its president, master brewer, and office manager are all musicians.

Sonic Aging is a dream project embodying our cherished philosophy: ‘Brewing as if creating music, sharing it as if performing.’

Observing the frequencies of six musical genres reveals distinct differences in pitch, tempo, and tonal range. We hypothesise that these vibrations alter the surface area of the barrel exposed to the liquid, thereby influencing the maturation process. This, in turn, creates unique characteristics in the balance of aroma, colour, and flavour.
